Vietnamese noodles are probably one of the most popular soups in the world.
Authentic Vietnamese noodle is a flavorful, aromatic broth made from broth and rice noodles, topped with different cuts and textures of meat and fresh herbs. It doesn’t have to be meat – in fact, many Vietnamese have vegetarian Vietnamese noodles – but it’s usually beef noodle soup.
If you want to learn about the deep love and geekiness of Vietnamese noodle , or if you want to make the best and most authentic Vietnamese noodle at home, follow the steps:
1. char spices and aromatics. It’s best to use a blowtorch so you can char all the spices at once, but if you have a grill, broiler, or cast iron skillet, just char the onions/green onions, ginger, and cinnamon.
2. combine all ingredients in the Instant Pot along with 4 quarts of water. If you want to make this super quick and easy in one pot, just add all the ingredients all together. If you have more time, set the sugar and meat aside and bring to a slow simmer later.
3. cooking. Cook soup at high pressure for 35 minutes. Quick release when done. If you plan to serve immediately, prepare the rice noodles, meat and side dishes while the soup is cooking.
Season to taste. Add the sugar (if you didn’t add it in the previous steps) and fish sauce (or salt) until the soup is just overflowing. Add the noodles and it will balance out.
Making. Place the rice noodles and tenderloin in a bowl and pour in about 2 cups (or more) of the river noodle soup. Sprinkle onions and cilantro on top, then sit at the table and let everyone add basil, bean sprouts, chili peppers, seafood sauce, and chili sauce to their liking.
